Menu Plan Monday

Sunday: leftovers

Monday: meatballs and mashed potatoes

Tuesday: chicken velvet soup

Wednesday: baked chicken breast, whole wheat pasta

Thursday: mini meatloaves, brown rice, green beans

Friday: pizza night

Saturday: sloppy joes

The meals without veggies listed we’ll just decide then which veggie to eat from the freezer.

Breakfasts are eggs, scones, oatmeal, biscuits, grits, smoothies, and pancakes.

Lunches are sandwiches, wraps, macaroni and cheese, tuna salad, leftovers, etc. for the kids and lots of salads for Stephen and I.

Snacks are cheese, baby carrots, nuts, fresh fruit, smoothies, etc.

Menu Plan Monday

As I’m adding new piano students and shifting others around, I’m finding dinners on lesson nights need to be more streamlined. For a while, lesson night was always a crockpot meal. But as my student load lightened, I got away from it. Now it looks like it would be wise to go back to using the crockpot more.

Here’s my pattern:
Sunday – fast and easy. With three little ones, we like to get lunch over quickly so they can go down for a nap before we need to leave for evening services
Monday – lessons in the afternoon but empty evening. Anything can go here
Tuesday – lessons, definite crockpot night
Wednesday – lessons before church – crockpot or super fast and easy (or both)
Thursday – currently empty. Lord willing, I’d like to add some students this night too. This is the night we do our most involved meals
Friday – pizza night
Saturday – junk food at home, more involved meals, or eat at in-laws

Now that the weather isn’t quite so hot, I’ve put soup on the menu. It’s still not really that cold here, but at least the thought of soup isn’t repulsive anymore! ;O)

Sunday: picnic on the porch

Monday: salmon cakes and french fries

Tuesday: soup in a pumpkin (recipe clipped from a magazine many years ago)

Wednesday: tacos

Thursday: chicken broccoli casserole

Friday: pizza night

Saturday: bbq chicken

Dipping spices for breadsticks

Dipping spices – recipe layered in the jar just to see how it would look. I’m thinking of giving jars of this as gifts this year, but would put the ingredients in a different order to make the layers prettier. We had breadsticks and dipping spices with salads last week and they were delicious!

This week is especially crazy so even though these are the meals that were originally planned at the beginning of the month, they’ve been moved around a bit. I don’t mind cooking from scratch on a busy night, but would prefer to have a quick meal planned for those days.

Sunday: tacos

Monday: potato soup

Tuesday: goulash

Wednesday: chicken parmesan

Thursday: stroganoff and ww pasta

Friday: pizza night

Saturday: grilled chicken, tossed salads, and maybe breadsticks and dipping spices

Menu Plan Monday

There’s a bunch of chicken meals this week because we have a ton of chicken in the freezer. We were able to get a bigger freezer last week (for only $20!) and we’re working on filling it with other meats. Anyone local know of a good butcher/meat market where we can get some good beef?

Here’s our menu as I planned it at the beginning of the month. I will be making some changes as we go along though. . . my insulin resistance symptoms are starting to appear again so it looks like it’s time for me to cut out the extra carbs that I’ve been eating.

Sunday: cream cheese chicken

Monday: sesame chicken, brown rice

Tuesday: tacos

Wednesday: chicken pot pie

Thursday: baked ham

Friday: pizza night

Saturday: bbq chicken

Peach cobbler and homemade vanilla ice cream – absolutely delicious!

Monday: glazed kielbasa and brown rice; we may grill out at the inlaws instead though

Tuesday: chicken velvet soup (changed a bit to add veggies and to make a bigger batch)

Wednesday: burgers

Thursday: mini meatloaves or meatballs, brown rice, green beans

This is another crazy week. We have piano lessons the first part of the week and Bible School the end of the week. The only day we don’t have something is today. Today is grocery shopping though so it’s going to be fairly busy anyway.

Sunday: picked up a $5 pizza because church service times were changed

Monday: tossed salads, grilled chicken, breadsticks

Tuesday: tacos

Wednesday: cream cheese ranch chicken (crockpot)

Thursday: Spanish rice (rescheduled from last week)

Friday: pizza night

Saturday: out for dinner

Parsley in the dehydrator. The flavor difference from storebought is amazing.

This week is mostly back to normal after an insanely busy weekend. I do have a lot of preserving I’d like to get done (canning tomatoes and applesauce, starting another batch or two of sweet icicle pickles, and hopefully picking up some peaches to freeze). Other than that, it looks like it’s back to our regular routine.

This week is actually pretty boring (for which I’m thankful – last week was crazy busy). There’s a lot of canning that needs to be done, but I enjoy it and it’s nice being able to put so much up for the winter.

Hot weather meals

It’s hot outside. I’m changing our menu for the night to chicken wraps, fruit, and carrot sticks. It would be even cooler if the chicken were grilled, but I’m boiling it because that was faster.
