Menu Plan Monday ~ February 8

Menu Plan Monday

Nothing too out of the ordinary for us this week. Just basic meals that we all like. Works for me.

Sunday: chicken and brown rice soup, breadsticks

Monday: meatballs, sweet potatoes

Tuesday: baked chicken breast, brown rice

Wednesday: glazed kielbasa, whole wheat pasta

Thursday: chicken and artichoke casserole

Friday: pizza night (every week)

Saturday: spaghetti

The meals without veggies listed we’ll just decide then which veggie to eat from the freezer.

Breakfasts are eggs, scones, oatmeal, biscuits, smoothies, and waffles.

Lunches are pb&j, tuna salad, tossed salads, macaroni and cheese, and leftovers.

Snacks are string cheese, baby carrots, nuts, fruit, etc.

Accidentally made regular coffee

I just realized that the cup of coffee I just made is regular and not decaf. It’s 9:15 p.m. so hopefully I’ll still be able to sleep tonight.

Stephen can drink all the caffeine he wants and it doesn’t affect his sleep. I drink any caffeine past suppertime and I’m up way too late. . .

Anyway, this new coffeemaker is great! A couple weeks ago I found a brand new Krups espresso machine at the thrift store for $8. It was still in the original box. It’s gotten a lot of use since then. It’s nice – I’ve been wanting a cappucino machine for a while, so this was perfect. It makes only a little at a time, making it easier to limit my coffee consumption.

It’s been a lot of fun experimenting with it and trying to see what fancy coffee drinks I can make with it. At the moment, it’s a sugar-free hazelnut latte macchiato. I think that’s the right name for it, anyway. Either way, it tastes good. It’s also been nice for when I’m craving something sweet.

But here’s hoping I’m not up too late tonight with church tomorrow. . .

Fleece soakers

Recently I came across a pattern for fleece soakers.

They go together really easily and doesn’t require a lot of fabric. They’re really trim, and do a great job of containing the wetness. Even though I measured both kids (the green soaker is for Caleb), they both fit pretty snug. Next time I sew any, I’ll make the next size up.

And just in case anyone is wondering, I still love the Rita’s Rump Pocket dipes. Since Caleb’s have seen nearly constant use for the past two years though, they’re getting really thin and threadbare in some places. I’m hoping he’ll be out of diapers before too much longer, but until then. . .

The pattern also includes instructions for adding an outer skirt to the soaker (similar to these). I’m really tempted to try those for this summer!

More sewing

Our Walmart is closing their fabric section and has all their fabric for 50% off. By now, it’s probably pretty slim pickings, but this is what I was able to get last week:

Some of it is for quilts (enough muslin for a quilt backing for about $5 – crazy!), some is for clothes, some is stash-building, and there’s a few pieces of ribbon for hairbows. It looks like I’ll be set for a while. I’m going to miss the convenience of going to Walmart to get fabric, but thankfully we still have two other stores in town that still sell it.

Menu Plan Monday

This week (month, really) should be pretty interesting. I’m trying to cook foods that fit into Stephen’s P90X program, stuff that’s not too high in carbs for me, and that’s also kid-friendly. I’m doing the P90X myself too, but not cutting back as much since I’m nursing.

What I’m really doing is more of a cross between the P90X and South Beach (they’re pretty similar, but South Beach sounds a bit pickier). The kids eat most anything but since Stephen isn’t home for lunch, I’ll do the kids’ favorite meals then. Those boys would live off peanut butter and jelly sandwiches if I’d let them.

Sunday: chicken and dumplings, steamed broccoli

Monday: cubed steak, mashed potatoes, lima beans

Tuesday: baked chicken breast, brown rice

Wednesday: chicken over tossed salads

Thursday: beef patties, whole wheat pasta

Friday: pizza night (every week)

Saturday: chicken pot pie with biscuit topping
