Menu Plan Monday ~ November 30th

We have church services all week this week (I love revival!), so meals need to be something fairly quick and easy. Most of these I’ll be able to start earlier in the day so things don’t get too hectic right before we need to leave.

Sunday – leftovers
Monday – Goulash
Tuesday – chicken and artichoke casserole (that we didn’t have last week) and brown rice
Wednesday – hot dogs and sweet potato fries
Thursday – taco salad (different from the traditional taco salad)
Friday – pizza
Saturday – baked chicken breast, breadsticks and dipping spices

The veggies for each evening meal we pick out when we go to fix supper. I like to plan out the higher carbohydrate sides in advance though.

Breakfasts are eggs, grits, oatmeal, biscuits, waffles, cereal, and smoothies.

Lunches are sandwiches, mac and cheese, fish sticks, leftovers, etc.

Received a new crib

Miss Anna outgrew her bassinet, so we made a point to get our pack and play from Stephen’s mom’s house Friday night. We had left it there when Anna was born so that they’d have a place for Caleb to sleep, but hadn’t taken it back home yet.

Well, God provided another crib for us yesterday. It’s beautiful. It’s a white sleigh design. I love it. I was completely prepared to use the pack and play as her bed (we did that with Caleb too), but it’s nice to have a real crib to use for her. Now we can convert Caleb’s bed into a toddler bed, instead of moving him out of it completely just yet.

I just love how God provided for us. We were prepared to make do with what we had, but God provided more than we needed even before we asked. God is so good!

Chicken and artichoke casserole

Jo asked if I would post the recipe for chicken and artichoke casserole. Since it’s from a cookbook and the recipe is posted online, I figured I’d post the link to it.

Chicken and artichoke casserole

I usually use the whole container of mushrooms (a small container), and a good 3+ cloves of garlic. Yummy!

Menu plan Monday ~ November 23

Now that we’re later into the month, I’m REALLY loving the once-a-month planning. I’m definitely planning on sticking to this way of planning from now on.

Sunday – ham slices, macaroni and cheese
Monday – lasagna
Tuesday – chicken and artichoke casserole (a FAVORITE around here) and brown rice
Wednesday – soup of some sort, fresh rolls
Thursday – Thanksgiving meal at Stephen’s grandparents’ home
Friday – pizza
Saturday – leftovers

Some time this week we’ll have turkey. I’m not entirely sure when the one in my frig will be thawed enough to cook, but I’m guessing it will be Tuesday.

Altering a dress pattern

This dress is my latest experiment. I love how it looks on her, but the pattern only has short sleeves. I lengthened them and gathered them to make a ruffle. It turned out great! The only thing I plan to change is to make the neck a little looser. It’s fine now, but there’s not grow room in it like there is in the rest of the dress.

My $.88 turkey

A long time ago, you could go on the Jenni-o turkey website and request a $5 coupon. I did, but never had a chance to use the coupon after it arrived. It stayed in my purse, but I’d pretty much forgotten about it.

Until this week. Walmart had their Jennie-o turkeys on sale for $.40 a pound, so I went to buy one (after buying one at Aldi earlier for $.99/lb – wish I would’ve known about the Walmart sale then!). After the coupon, a 14-pound turkey cost me only $.88. I ended up buying two turkeys, and got twice the amount of turkey for literally half the price I paid for one at Aldi. It was interesting trying to find room in the freezer for another turkey, but I wasn’t about to resist them at that price.

The other one is in our frig, thawing. It’ll probably need to be cooked before Thanksgiving, but that’s ok since we’re going to Stephen’s grandma’s for the day anyway.
